Here’s a few of the lovely slices and sweets that I love to make. I’ve also included Edison’s Pancakes. He enjoys making these every Sunday morning and we all enjoy eating them. Especially Archey !! I hope you can share these with your family and friends….
Gluten Free Choc Brownies
150g melted butter
2 eggs lightly beaten
1 cup gluten free flour – I use a blend of GF self raising flour and either brown rice flour or coconut flour. Buckwheat flour also works well.
½ tsp GF baking powder
½ – ¾ cup raw sugar or rapadura sugar
1/3 cup raw cacoa powder or carob powder
½ cup of either chopped nuts (hazelnuts work well with chocolate!) almond meal or desiccated coconut
Preheat oven to 180 deg C.
Line a slice tray with either brown paper (which can be composted!) or baking paper (can’t be composted!).
Melt butter and when cool add beaten eggs.
Sift flours, baking powder and cacao powder into a bowl. Add sugar to bowl and mix through.
Add butter and eggs to dry mixture, stirring gently until well blended.
Add ½ cup of nuts, coconut or whatever you are using and gently stir through mixture.
Pour mixture into lined slice tray and bake in pre-heated oven for about 20 mins.
I always check the mixture after 15 mins with a skewer, as you don’t want it over cooked.
TIP – Place a skewer into the centre of the slice, if a small amount of mixture sticks to the skewer it’s almost ready so maybe baked for another few minutes. Slightly under cooked will produce moist brownies.
Cool in slice tray and then cut into squares. Store in a sealed container in the fridge.

EDISON’S PANCAKES – Gluten-free
½ cup of brown rice flour or other * can use buckwheat or coconut flour or other GF flour.
½ tspn of baking powder
1 ½ cup of milk
1 banana mashed or ½ an apple grated
Sift flours and baking powder into a large bowl
Beaten the eggs and milk together and add to dry ingredients
Blend well using an egg whisk.
Add mash banana or grated apple and mix.
Put a non stick pan on medium heat. Cover the pan with butter and when heated pour in enough mix to almost cover the base of the pan.
Serve with honey, lime juice, jam or yoghurt.
Archey loves Edison’s pancakes with lots of honey !!!
2 cups natural muesli (GF options available)
½ cup coconut
½ wholemeal self raising flour (GF available)
¼ cup raw sugar
2 tablespoon honey
Preheat oven to 180 deg. Lightly grease slice pan or line with brown paper**
Place all dry ingredients in a bowl. Melt butter and honey over low heat and add to dry ingredients, mix to combine.
Pour into slice pan and press firmly to flatten, using spatula or base of glass.
Bake for 10-15 minutes. Let cool in pan before cutting into squares. Place into airtight container and store in fridge.
** I use brown paper bags cut open to line cake tins and muffins. You can then place the used brown paper in the compost…
GF – Gluten Free. There are many Gluten Free products available for baking including muesli and brown rice,
buckwheat and coconut flours.
8 frozen bananas
250ml coconut cream – Organic available at some supermarkets
Chop frozen bananas and place in a food processor. Blend until bananas are ‘grainy’. Add coconut cream slowly, while still blending and continue to blend until smooth and creamy. Serve straight away and enjoy !!!
Makes about 4 serves.
